INGREDIENTS
- 450 gr U.S. pork loin cutlets
- ½ tsp garlic powder
- ¼ tsp black pepper
- 1/8 tsp salt
- ½ cup breadcrumbs
- 1 bunch radishes
- 1 potatoes
- 1 sweet onion
- 1 tbsp olive oil
- 1 cup Greek yogurt
- 1 lemon
- 2 tbsp fresh dill
- 1 can sliced beets
- 1 cucumber

INSTRUCTIONS
- Heat oven to 200ºC.
- Mix together the radishes, potatoes, onion and olive oil on a sheet tray. Roast vegetables for 30 minutes (or air fry until desired doneness).
- Season pork with garlic powder, black pepper and salt, and place on a sheet tray.
- Sprinkle on panko or breadcrumbs and bake for 15-20 minutes (or air fry until desired doneness), cooking to an internal temperature of 60ºC. Let rest for 3 minutes.
- While pork is resting, mix together the yogurt, lemon zest and juice, and dill.
- Gently fold in the beets and cucumber.
- Serve pork, roasted vegetables and salad all together. Garnish as desired.
