Jalisco Toast with Pork Loin

INGREDIENTS
900 grams of US pork loin
½ cup of water
2 garlic cloves
¼ of a red onion
3 bay leaves
1 tsp. oregano
Juice of 1 lime
4 Roma tomatoes
1 tsp. sugar
Salt and pepper
1 garlic clove
½ tsp. dried marjoram

INSTRUCTIONS

In a large bowl, marinate the pork with the combined marinade ingredients, ensuring the liquid covers all the meat. Cover and refrigerate for about 1 hour.

For the tomato sauce, place the water and tomatoes in a medium saucepan over high heat and cover until boiling. Reduce heat to low. Let the tomatoes simmer until soft. Remove from heat and let them cool slightly. Blend the tomatoes with the sugar, salt, garlic, dried marjoram, and pepper into a purée.

Preheat the grill to medium heat. Make sure it’s clean and grease the grates before placing the meat.

Grill the pork loin over direct heat with the lid closed until it reaches an internal temperature of 63–71°C, then let it rest for 3 minutes.

Place the cooked pork in the fridge for 30 minutes, then slice it thinly.

To serve the tostadas, top corn tostadas with the grilled pork loin, tomato sauce, and any toppings of your choice.
