One Pan Mediterranean Pork Feta Burst Cherry Tomato
INGREDIENTS
- 4 U.S. boneless pork chops
- 3 tbsp vegetable oil
- 1 white onion
- 1 tbsp Italian seasoning
- Pinch of salt and black pepper
- 4 garlic cloves
- 1 container cherry tomatoes
- 1 box penne pasta
- 6 cups water
- 1 cup baby spinach
- 1 cup feta cheese

INSTRUCTIONS
- In a large, deep skillet, heat oil over medium-high heat. Add onion and sauté for 3-4 minutes until softened.
- Add pork, Italian seasoning and a pinch of salt and black pepper, if desired. Cook, sautéing for 4-6 minutes until the pork begins to brown.
- Add garlic and cherry tomatoes. Cook for another 3-4 minutes, stirring constantly. Use a spoon to burst the cherry tomatoes and add flavor.
- Add penne pasta and stir. Add 6 cups of water; cover and bring to a boil. Once boiling, reduce heat to a simmer and cook pasta covered for 20 minutes until pasta is al dente and most of the water has evaporated. Note: If the pasta seems too dry, add another ¼ cup of water. If it seems too wet, cook for another few minutes to evaporate remaining liquid.
- Add spinach and feta to pasta. Gently stir until spinach is wilted. Cook pork until internal temperature reaches 60ºC followed by a 3-minute rest. Divide pasta among 4 bowls and serve immediately with lemon wedges, if desired..
