Pork Loin with Mango Sauce

INGREDIENTS

  • 1 pork tenderloin (900 gr.)

For the marinade:

  • 1 mango
  • 1 cup lime juice
  • 1 cup orange juice
  • 3 garlic cloves
  • ½ cup chopped cilantro
  • 1 teaspoon white wine vinegar
  • Salt and pepper

For the mango sauce:

  • 1 mango
  • 1 tablespoon red bell pepper
  • 1 tablespoon red onion
  • 1 tablespoon cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper

INSTRUCTIONS

  1. For the marinade, combine all the ingredients in a blender and blend for 1 minute.

  2. Place the pork in a large resealable bag or a glass container. Pour the marinade over the pork and seal the bag or cover well. Marinate for 1 to 24 hours.

  3.  Preheat the oven to 180°C.

  4.  Remove the pork from the marinade and discard the marinade. Pat the pork dry.

  5.  In a medium skillet, heat 1 teaspoon of vegetable oil over medium-high heat. Sear the pork on all sides, then transfer it to a baking dish. Place it in the oven and cook for 25–28 minutes, until the internal temperature reaches 60–70°C. Remove from the oven and let it rest for 5–10 minutes.

  6.  For the mango sauce, place all ingredients in a bowl and mix well.

  7.  Slice the pork to serve.

  8.  Serve topped with the mango sauce.
