INGREDIENTS
900 gr of US pork shoulder
1 tbsp honey
½ tsp baking soda
2 tbsp avocado oil
1 egg
1 tsp cornstarch
Salt and pepper to taste
2 tbsp rice wine or dry sherry
Sauce
2 garlic cloves
55 g butter
A pinch of basil
2 tbsp Greek yogurt
85 g evaporated milk
¼ tsp chicken bouillon powder
½ tsp honey
Salt and pepper to taste
1 tbsp avocado oil
1 jalapeño pepper

INSTRUCTIONS

Heat a wok or skillet over medium-high heat and add the avocado oil and garlic. Sauté the garlic until fragrant.

Add the butter and basil, and stir for about 3 minutes. Pour in the evaporated milk and Greek yogurt. Bring to a boil over medium heat and let the sauce thicken slightly.

Season with the chicken bouillon, honey, salt, pepper, and add the jalapeño pepper. If you want the sauce to be a little spicier, leave the seeds in the jalapeño.

Remove from heat.
Pork Preparation:

Marinate the pork with honey, baking soda, egg white, cornstarch, rice wine, salt, and pepper. Rub the meat with the ingredients.

Preheat an air fryer to 200°C. Place the marinated pieces in the basket, ensuring it is not overcrowded. Cook in batches if necessary. Flip the pieces halfway through cooking to ensure even cooking.

Cook to an internal temperature between 63°C and 71°C. Once cooked, let the meat rest for 3 minutes.

In a pan on low heat, simmer all the remaining ingredients and serve. Pour the sauce over the cooked pork.

The dish can be served with charred sweet peas and avocado. It also pairs well with a cactus salad or rice with mixed vegetables.
