Pork Chops in Cider Marinade

INGREDIENTS

4 US Pork chops Porterhouse
1/3 cup of table salt or fine sea salt
1/3 cup of maple syrup
2 teaspoons of dried thyme

1 ½ cups of fermented apple cider
1 ½ cups of ice-cold water
2 teaspoons of hot pepper sauce, like Tabasco, divided

INSTRUCTIONS

  1. In a small skillet, stir 1 cup of water with salt, 1/3 cup of honey, and thyme over medium heat until the salt dissolves and the water is hot, but not boiling.

  2. Remove from heat. Add the cider, ice water, and 1 teaspoon of hot sauce, and stir until the ice dissolves to create a marinade.

  3. Place the chops in a resealable plastic bag and seal the bag. Refrigerate for 1 to 2 hours, no longer. In a small bowl, mix the remaining honey and 1 teaspoon of hot sauce; set aside.

  4. Preheat the grill to medium-high heat (about 230°C). Remove the chops from the marinade and pat them dry with paper towels. Grill the chops over direct heat until their internal temperature reaches 60ºC (medium-rare) and 70ºC (medium) on a meat thermometer, about 4 to 5 minutes per side.

  5. During the last 2 minutes, brush the chops on both sides with the remaining honey mixture.

  6. Remove the chops from the grill and let them rest for 3 minutes.
