A recipe for pork in creamy sauce with a touch of honey and jalapeño that combines mild and spicy flavors. A truly delicious dish!

Pork Shoulder with Butter

INGREDIENTS

900 gr. USA pork shoulder
1 tbsp honey
½ tsp baking soda
2 tbsp avocado oil
1 egg white
1 tsp cornstarch
Salt and pepper
2 tbsp rice wine or dry sherry

Sauce

2 garlic cloves
2 oz butter
A pinch of basil
2 tbsp Greek yogurt
60 gr. evaporated milk
¼ tsp dry chicken broth powder
½ tsp honey
Salt and pepper
1 tbsp avocado oil
1 jalapeño

INSTRUCTIONS

Sauce Preparation:

  1. Heat a wok or skillet over medium-high heat and add the avocado oil and garlic. Sauté the garlic until fragrant.

  2. Add the butter and basil, stirring for about 3 minutes. Pour in the evaporated milk and Greek yogurt. Bring to a boil over medium heat and let the sauce thicken slightly.

  3. Season with dry chicken broth powder, honey, salt, and pepper, then add the jalapeño. If you want the sauce to be spicier, leave the jalapeño seeds in.

  4. Remove from heat.

Pork Preparation:

  1. Marinate the pork with honey, baking soda, egg white, cornstarch, rice wine, salt, and pepper. Rub the ingredients into the meat.

  2. Preheat an air fryer to 200°C. Place the marinated pork pieces in the basket, ensuring not to overcrowd it. Cook in batches if needed.

  3. Flip the pieces halfway through cooking for even doneness. Cook until the internal temperature reaches 60–70°C. Once cooked, let the meat rest for 3 minutes.

  4. In a pan over low heat, simmer all remaining ingredients and serve. Pour the sauce over the cooked pork.

  5. This dish can be served with charred sweet peas and avocado. It also pairs well with a nopal salad or vegetable fried rice.
