INSTRUCTIONS
Sauce Preparation:
-
Heat a wok or skillet over medium-high heat and add the avocado oil and garlic. Sauté the garlic until fragrant.
-
Add the butter and basil, stirring for about 3 minutes. Pour in the evaporated milk and Greek yogurt. Bring to a boil over medium heat and let the sauce thicken slightly.
-
Season with dry chicken broth powder, honey, salt, and pepper, then add the jalapeño. If you want the sauce to be spicier, leave the jalapeño seeds in.
-
Remove from heat.
Pork Preparation:
-
Marinate the pork with honey, baking soda, egg white, cornstarch, rice wine, salt, and pepper. Rub the ingredients into the meat.
-
Preheat an air fryer to 200°C. Place the marinated pork pieces in the basket, ensuring not to overcrowd it. Cook in batches if needed.
-
Flip the pieces halfway through cooking for even doneness. Cook until the internal temperature reaches 60–70°C. Once cooked, let the meat rest for 3 minutes.
-
In a pan over low heat, simmer all remaining ingredients and serve. Pour the sauce over the cooked pork.
-
This dish can be served with charred sweet peas and avocado. It also pairs well with a nopal salad or vegetable fried rice.
Enjoy!
