Pork Loin with Mango Sauce
INGREDIENTS
- 1 pork tenderloin (900 gr.)
For the marinade:
- 1 mango
- 1 cup lime juice
- 1 cup orange juice
- 3 garlic cloves
- ½ cup chopped cilantro
- 1 teaspoon white wine vinegar
- Salt and pepper
For the mango sauce:
- 1 mango
- 1 tablespoon red bell pepper
- 1 tablespoon red onion
- 1 tablespoon cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper

INSTRUCTIONS

For the marinade, combine all the ingredients in a blender and blend for 1 minute.

Place the pork in a large resealable bag or a glass container. Pour the marinade over the pork and seal the bag or cover well. Marinate for 1 to 24 hours.

Preheat the oven to 180°C.

Remove the pork from the marinade and discard the marinade. Pat the pork dry.

In a medium skillet, heat 1 teaspoon of vegetable oil over medium-high heat. Sear the pork on all sides, then transfer it to a baking dish. Place it in the oven and cook for 25–28 minutes, until the internal temperature reaches 60–70°C. Remove from the oven and let it rest for 5–10 minutes.

For the mango sauce, place all ingredients in a bowl and mix well.

Slice the pork to serve.

Serve topped with the mango sauce.
