Pork Fillet in Teriyaki and Orange Sauce

INGREDIENTS

2 US pork loins

Marinade:

1 cup low-sodium soy sauce
1/2 cup orange juice
1/4 cup brown sugar
2 cloves garlic
1 teaspoon ginger
1 teaspoon sesame oil
1 teaspoon cornstarch dissolved in 1 teaspoon water
Orange wedges for garnish
Sesame seeds for garnish

INSTRUCTIONS

  1. Place the pork loins in a Ziploc plastic bag and set aside. In a bowl, mix the marinade ingredients. Reserve half a cup for the sauce. Pour the remaining marinade over the pork. Seal the bag and refrigerate for at least 2 hours, or up to 24 hours.

  2. Preheat the oven to 200ºC

  3. Remove the pork from the marinade and discard the marinade. Place the pork loins on a roasting pan. Roast for about 20 to 30 minutes, until the internal temperature of the pork reaches 60°C to 70°C. Let it rest for 5 minutes before serving.

  4. While the pork is cooking, place the reserved marinade in a saucepan and bring to a boil. Add the cornstarch mixture and stir well. Cook until it thickens and begins to bubble.

  5. Season with salt and pepper. Glaze the pork with the sauce before removing it from the oven. Glaze again before serving, and garnish with orange wedges and sesame seeds if desired.
