INGREDIENTS

Marinade

½ cup mango juice
¼ cup lime juice
¼ cup olive oil
2 tbsp brown sugar
1 tbsp garlic
1 tbsp onion
1 tsp salt
½ tsp pepper
¼ tsp chili

Pork Loin

1 US pork loin
1 cup marinade
1 cup chicken broth

Mango Pico

2 mangos
1 red bell pepper
1 red onion
1 jalapeño
Juice of 1 lime
1 tbsp olive oil
1 tsp cumin
1 tsp salt
⅛ tsp red pepper flakes
¼ cup cilantro

INSTRUCTIONS

  1. To make the marinade, mix mango juice, lime juice, olive oil, brown sugar, garlic, onion, salt, pepper, and chili powder in a bowl.

  2.  Marinate the pork loin in a Ziploc bag for 30 minutes.

  3.  Preheat oven to 350°F, then roast the pork in a pan with chicken broth, basting every 30 minutes, until it reaches 145°-160°F internal temperature.

  4.  For the mango pico, combine mango, bell pepper, red onion, jalapeño, lime juice, olive oil, cumin, salt, and red pepper flakes. Let it sit for 10 minutes and stir in cilantro.

  5.  Serve the pork with pan juices, mango pico, and a Russian salad.
