Spanish Style Pork Ribs with Sherry Vinagrette
INGREDIENTS
- 2 strips of ribs
- 1 tablespoon thyme
- 1 tablespoon olive oil
- 1 tablespoon of Paprika
- 4 garlic cloves
- Salt and pepper to taste
Seasoning:
- 10 tablespoons of extra virgin olive oil
- 3 tablespoons of sherry vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon thyme
- 1 clove of garlic

INSTRUCTIONS
- Rub the ribs with oil, thyme, paprika, minced garlic, salt and pepper. Cover and chill overnight.
- Prepare the grill to cook with direct heat (approximately 170ºC – 190ºC).
- Individually wrap each rib in aluminum foil and place packets meat-side up and cover grill, turning packets every 10 minutes to ensure even cooking. After 1 hour, remove the ribs from the grill and let them rest (still wrapped) for 15 minutes.
- To finish, remove the ribs and spread 2 tablespoons of sherry vinaigrette. Grill for 10 to 15 minutes, allowing the meat to burn slightly. Enjoy!
